The Science Behind Pizza and Why it Tastes SO Good!

If you hadn’t already guessed, we <3 pizza and it got us thinking: why do we love the cheesy disc of dough so much? There HAS to be some science behind it. Lo and behold, there is!

Blame it on the glutamate and our umami taste perception.

The more glutamate in your dinner, the more flavourful it will be and, guess what? Tomatoes and aged cheese are full of glutamate goodness! Umami is the fifth type of taste (after sweet, sour, salty and bitter) which literally means ‘delicious’ in Japanese but is described as being rich and savoury. Combine glutamate with your umami sense and you’ve got a match made in heaven.
